Mindy's Deep Forest Pie


2 cups pitted cherries

1 cup blackberries

1 cup blueberries

1/2 cup of sugar (more if you like sweeter)

block of dark chocolate (grated) Whitakers is best:)

4 egg whites

400 gms (2 pottles) cream freiche (or light cream cheese)

1 tsp vanilla

1 pack of cameo creme biscuts crushed for crust (or any dry choc biscut)

2 tblsp margerine melted


Beat cream freiche, vanilla and sugar till smooth, fold in the berries and chocolate.

In a separate bowl wip eggwhites only till stiff peaks form.

Fold berry mixture in. careful not to over mix egg whites. Set asside.

Then in food processor or bag crumble the biscuts add the melted butter to biscuts. press into a pie dish. fill with berry mix and add etra choc to the top. Set in fridge one hour.

add fresh berries ontop for garnish. these can also be done as individual servings in glasses or ramakins.

I think its turned out pretty. I can change out the jewelery in the frames so to have new stock in them daily! enjoy. and psst...happy valentine's day in advance:)
